"Don't talk to me about sacrifice !" Wow, that is a heartbreaker. Eloise knew what she was sending her son to, and did it anyway because she knew she couldn't change things.
And Eloise didn't know about Desmond's fate because her knowledge of the last thirty years is all based upon what's in Faraday's journal, which I'm thinking will ultimately end up in her hands in 1977. But anything after Daniel left went back to the past, that wouldn't be in his journal.
